Cheesy Bacon Bomb

Cheesy Bacon Bombs

 I have seen this on Pinterest and online and decided since I had the makings of these seemingly simple treats that it was time to give it a try. What an utterly easy and completely sinful delight. I mean it has bacon as one of the ingredients so right there it starts off on the right foot! I made these for our family get together and they were gone in a blink of an eye. I couldn't believe how good these were. My husband tried to get me to leave them home so he could have them for his own. I almost conceded after I tried the first one. Make these for your next party and you will be the most popular foodie guest there!


1 pound of bacon

Mozzarella Cheese *( I bought Cliegene, mozzarella in a ball in water)

1 can of Grands flaky biscuits

Oil for frying 

Directions: Take one biscuit and cut the dough into 4 pieces. Place a ball of mozzarella into the dough and fold it over so cheese is covered. Wrap one slice of bacon around it and place a toothpick to secure. Place in oil. I used enough oil to cover half the piece. Just flip them over to make sure both sides are cooked evenly. Don't overcrowd because the dough expands in the oil. Work these until crispy and remove onto a plate with paper towels. 

Serve Immediately

An unpolished Mommy

  When I am out and I see the mom who has the perfect hair, makeup applied and cute outfit out shopping with her 3 kids I find myself taking stock. A once over show this mommy in her favorite jeans, tennis shoes and my hair in a ponytail. Not because I don't want to look more polished but I can't figure out how. Just to get out of the house to go certain places I have to start getting ready a couple hours ahead of time. I try and shower during the double nap so my hair can start to air dry and cut down on the blow dry time. I make the bottles, grab the sippy cups, extra diapers for both girls, snacks, bibs, baby food and toys to keep them occupied.

 By the time nap is over and its almost time to go, I get everyone up, diapers changed, clothes on, hair brushed and shoes on. My husband helps with these things and for him to get ready is ten minutes max but somehow no matter how early I start I find myself standing in my pajamas with 10 minutes to get ready. 


   Then its a rush to apply make up, run a brush thru the hair, grab clothes and socks and bolt downstairs to the car where everyone is buckled and ready for our trip out.
Don't get me wrong, its not that I look hideous and I am not in sweat pants or anything but when I see the other moms who are lazily browsing thru the aisles in the jeans tucked into the cute boots and nice cardigan, I really start to wonder. I even have these well behaved little girls that make it easy for me to get them ready. My husband is really good looking and my kids are adorable and I often wonder if when we are seen as a family out together if people think.."I wonder how she landed that cute family?"
  I feel like I am in a state of disrepair. The rusty car that clutters the driveway. I have the best of intentions but with the amount on my plate I find myself always in last place. I am actually okay with that because the mommy automatically puts everyone first. I think I need to make a deal with myself to try and do the small things that will make me a little more polished. 
My list:
  1.  Keep those eyebrows on the 3 week wax schedule- 3 weeks needs cleaned up. 4 weeks  leaves me with an eye beard thus making my eye shadow look like a 5 o'clock shadow.
  2.  Don't let the gray hairs overtake you, get that hair colored and shaped so the hair doesn't just hang there. You may feel old but you don't have to look old!
  3.  Stop letting my clothes get so worn that I have holes in my socks and my underwear.
  4.  Stop whining about money and buy myself a pair of shoes that isn't a tennis shoe.

This last one is hard to admit but in the interest of being honest and straight forward, I have to say this. I was pregnant twice in under 2 years so I have more maternity clothes than normal clothes. I wear the t-shirts still because I don't have the time to go and buy more clothes and the money is a little tight. These aren't always flattering.

    5. Go buy some clothes that aren't maternity and either give the clothes away or pack          them away.
I don't want to look perfect but I would like to not be running out of the house, putting shoes on in the car and wondering if I look okay enough to go somewhere. I find myself chanting in my head."please let this not be the day I run into someone I know". Its too much pressure. So I will have to commit to my list and one by one polish this mommy up a bit. I need to do it for me because sooner or later I will run into someone I know and instead of quickly turning around and trying to escape I want to be proud and have them think..How does she do it? How does she look put together and have two kids?

Being more polished, its my goal!
(This is my beautiful baby and I tame that hair every day even though its perfect the way it is)
This post is dedicated to my best friend Kathy, for  years I look at her and her beautiful hair, makeup, outfits and 3 kids and think..HOW DOES SHE DO IT? She makes motherhood look easy and she does it with continued grace. I love her because she loves me even when I am at my most unpolished!

Roasted beef ribs

                                   Roasted Beef Ribs

    I love pork ribs, they are one of my favorite summer treats. If you were to search pork ribs you would never run out of different ways to cook them. My husband and I like to break from the normal occasionally by doing beef ribs. I think these are not as popular or maybe not as easily found. Either way when cooked correctly these are outstanding. We generally put these on the barbeque but we wanted to try them in the oven. My sister is always making these in the oven and they practically melt in your mouth! 

2 racks of beef ribs 
Garlic powder
Chili powder


Pre-heat oven to 350 degrees.
Remove ribs from package and cut the racks in half. Take your roasting pan remove the lid and fill it 3/4 with water. Season your ribs with the garlic powder, salt, pepper and chili powder (to taste). Be liberal with the seasoning so that your ribs are evenly coated. Place ribs on your roasting pan, meat side up and cover with foil. Make sure the foil is snug so that the steam from the water stays in. 

The ribs will stay in the oven at 350 for 2 hours - then remove the ribs and baste with your favorite barbeque sauce. Place back in the oven at 400 degrees for 30-40 minutes. This will crisp up the ribs a little and finish roasting. 

Once ribs are done, cut into individual bones andserve immediately with additional sauce for dipping!

My EPIC Pinterest fails

                                               My Epic Pinterest Fail

    I had stumbled across a site that was dedicated to recipes from Pinterest that people had tried and failed. I laughed so hard at some of these pictures because I have totally made these mistakes. See below my hard work that made me puzzled..

I found these beautiful and unique cupcakes from one of my favorite sites. when I saw them I knew I wanted to make these immediately..I also wanted to bake with my toddler for the first time and this looked easy enough! See the picture below and the recipe from Chef In training.

Now see my pathetic attempt at this cupcake and frosting- It looks like melted wax..I could barely convince my family to try them- The taste was great but not sure what happened to the frosting..

I tried and tried to get this frosting to look nice and stand up but to no avail..these cupcakes were a MESS.

I didn't let this get me down, I tried again with what looked like an easy but yummy recipe.

Here is what I ended up making- The sad part is this had like 3 steps and 5 ingredients and I came out with White fudge jerky- they were so chewy and disgusting..This was really disappointing. Also, when I tried to cut them out of the pan I bent a knife.. GOOD GRIEF. 

I am not a baker, I say it over and over. I still waste time on trying because that day my little helper had fun. It was the first time baking with my daughter and even if we NEVER make anything edible I will keep trying because when sister got her first taste of Marshmallow she was a big fan.. I may have bombed these two delicious and easy recipes but this face was totally worth it!
