Saving for your Sunny Day



    We are coming up on our ten month review for owning our home. I can hardly believe that ten months have come and almost gone and we have been nestled into our new home.  I look at it now and imagine what it will look like when I finally pick a paint color and find curtains I love.  Our builder will be coming soon to do our inspection and fix the things that need to be fixed after a house settles into a foundation.  This time last year my husband and I were in our temporary two bedroom apartment because we had sold our condo and were waiting for the build to start. 




My husband and I had saved for about five years in order to be able to sell our condo and find a place where our family could grow. We set up our budget for groceries and weekend fun and what ever was left over we put into our savings. We had a strong resolve for the savings account because we were ready to get moving and find our forever home.  Our full tax refunds went in there, bonus money and money from paychecks. The paycheck part was harder because it seemed like we justified more spending than we should have and I know we could have saved more than we actually did. 


If I could go back and do more research I wish I would have used this site by Sun Trust Bank.  Any person off the street can say "I want to start saving" but how do you really go about it? We were lucky because my husband is eligible to use the services offered by the VA and there are lots of benefits that come with that service.  One of my most searchable items was the rates and how to lock in. I started checking the rates per day/points paid like I was checking the weather.  It was a little addicting. I went through all the doubts possible. Did we just get a mortgage bigger than we could afford? Will we be approved for the amount we need in order to build the house we had chosen?  





A house is one of the biggest purchases you could ever make and everything that comes with it can be overwhelming.  Like I had mentioned before we had a nice savings account going but if we would have had to put 20% down on the house then we would not have had enough saved.   Who really would have 20% saved? I am grateful as well that we didn't have to do that because even though our house was new we needed way more things than I could have imagined. Thankfully we had an amazing loan officer who gave us great advice. She showed us that by using an adjustable rate mortgage we could save on our monthly costs. I was afraid of an adjustable rate at first but to be honest this saved us $130 a month and at the time we locked in the points were low enough that it caused our closing costs to be around $1800 instead of the $5600 originally predicted. That advice made the difference for us between putting in a yard this year or waiting until next year. 



Movers that moved us from the condo to the apartment then the apartment to the house.

Blinds to cover all of the windows so that our neighbors weren't privy to all of our business.
Putting in our own yard and then 100 other things we didn't see coming. 

We have been extremely careful with our spending but I will tell you that ten months in our savings has drastically dwindled to almost nothing and I am feeling nervous until those funds go into our savings account again. We were ready for an increase mortgage payment in theory but I wish we would have lived for a few months like we were paying that increased mortgage to get a more "real life" view of what our day to day costs would be.


So now that we are settled and have hopefully have spent our last large sum (refrigerator, washer, dryer and yard) we need to start saving again. This time though I want to save for a sunny vacation that I plan for, save for and can spend money on without guilt. 

I had a hard time spending the money that we saved, even though we did so for the house. I kept thinking, what if we have a medical emergency or one of us loses our jobs?  

I really have no regrets and will remember the first moment we were given our keys. From worrying about the costs, mortgage, utilities, down payments and school districts we are in our home and we love it. I will never really feel comfortable without having a saving account and we often think of starting two. One for the must haves and one for the fun!

 Before I had kids I was able to read three or four books a month. Now I admittedly have less time to read but I enjoy it even that much more. This summer has been slower for me than normal for reading but faster than I could have imagined for everything else. Here are five of the books I read this summer and I was lucky to with my choices because I read some really great books.  

S.K Tremayne was my new author find and I read Ice Twins. I am generally a huge chicken and can't read anything that gives me the chills or freaks me out. This novel is about a parent's worse nightmare. The loss of a child and then the slow shattering of a family. The sister's are twins and the circumstance around the death starts to haunt the family. The twist in the book mixed with the emotion of the family was well told. This is a definite must read and I am looking forward to reading more from S.K Tremayne. 


Leaving Time by Jodi Piccoult was probably my favorite for the summer. I would reccomend this book to anyone. I am an avid reader of Jodi Piccoult and have read a good majority of her books. This one hands down had the best ending and left me shocked. I couldn't wait to turn the pages and finish the book and then was disappointed when it was over. Leaving Time is about the relationship between husband's and wives and how it can affect children. The further I read into the book the more I felt the emotion from the narrative of each of the characters. Jodi Piccoult can weave a tale and create emotion in the written word. There were so many great lines and this one about grief was my favorite.

“I think grief is like a really ugly couch. It never goes away. You can decorate around it; you can slap a doily on top of it; you can push it to the corner of the room—but eventually, you learn to live with it.” 



Summer Land by Elin Hildebrand - This novel pairs the feelings of end of year with a parent's worst nightmare. This book had my crying, cringing and reading as quickly as I could. From a daughter's relationship with her mother to teh most important relationship with a sibling. There are moments that change your life and your fate and Summer Land.  No matter what age you are this book will resonate in your heart. How they overcome utter grief is just heart wrenching. MUST READ!



Kick back, take some of that much needed me time and pick up one of these three novels. Good reads and great to pass on to your friends. I would love to know your thoughts if you have already read one of these or once you have a chance for some late summer reading. Share with me!

No- Roll Enchilada



           I love Mexican food. All of it, I love it. I love it cheesy, melty and spicy.  I love it even more when it is easy to make. My husband loves this dish and it is one of his favorite dishes, he doesn't even realize how easy it is to make so I am always happy to add this to our weekly menu.  If you love Mexican food you probably already have most of these ingredients in your pantry.

Ingredients

1 15 oz can of whole kernel corn
2 15 oz can of black beans
3 cups of Enchilada Sauce (we love and use El Paso Enchilada sauce)
1 1/2 lbs of chicken breast
1 pack of 10 medium flour tortillas (cut in half)
3 cups of shredded cheese (your favorite)
1 can of olives (optional)
Green onion
Sour cream
Cilantro

Preheat oven to 350.

Season your chicken with Adobe seasoning ( found in the spice aisle).  Bake your chicken for 30 minutes of until no pink is left in the chicken. Cool and then cut into small pieces. Set aside.

Prepare your 9x13 pan by pouring a bit of enchilada sauce on the bottom. Take about 8 of the halves of the tortillas and cover the bottom of the pan. 

Next pour 1/2 a can of black beans on the tortilla.
Sprinkle the corn on top of the beans, green onions on top of that.

Spread a nice handful of the chicken pieces and then cheese

Repeat 



Top and last level should be a layer of tortilla, sauce and cheese.

Bake in the oven for about 25 minutes or until the cheese is melted through. Sprinkle the cilantro on top with a little extra cheese and then cut and serve. 

We use a dollop of sour cream on ours but it is totally optional. Here is the thing. This is incredibly easy to make. If you want to skip baking the chicken you can use a rotisserie and just use the chicken from that instead of making the chicken.




Oh, yummy, melty goodness..it doesn't get better than this. Enjoy your dinner!

5 way to survive colic



  My first daughter slept for the first six weeks she was home. I laid on the couch with her asleep on my chest and was serenely happy watching her breath. I knew immediately the first time I held her that I would want a second child. When I found I was pregnant with my second child (planned) my heart was over-joyed. From the moment we conceived and thru my pregnancy every single thing was different. When we were graced with her presence and she yowled and yowled my OBGYN said "This one is going to be a drama queen".

 And so it was foretold, our second one didn't sleep often and  7 days in we discovered that are poor sweet baby girl had a good case of colic. I was sleeping on the couch so my husband and 2 year old weren't disturbed by the constant crying at night.  I was utterly exhausted and when nothing I did could calm my sobbing newborn, I started to feel like a failure. 





 The actual definition of colic is :  one who, otherwise healthy and well-fed, had paroxysms of irritability, fussing, or crying lasting for a total of three hours a day and occurring on more than three days in any one week for a period of three weeks." 

My definition of colic - The inability to calm your crying baby. To console, comfort or solve what feels like unending pain in your newborn.


  Every day at the same time she would wake up, her body would tense and the crying would start and then it wouldn't stop for almost five hours. I would walk, rock, sing and snuggle. I googled, asked the pediatrician and changed formulas. Nothing would work. My pediatrician initially thought we had a milk allergy and we went through the roller coaster of changing formulas and trying every soothing method in the book. When the crying would start, I couldn't think straight, I could do nothing for my two year old. Thankfully my husband was able to take her out and do things with her because I swear she was starting to get PTSD from all the crying.  I made sure everyone was taken care of, except for myself.  I never had bad feelings toward my poor baby but I had bad feelings for myself. 


I felt like a horrible mother

An exhausted, covered in spit up, cranky, nervous mess.

Her colic lasted 4 weeks and 3 days and on the day the crying didn't happen I almost missed it. By this time I learned how to just get through it. I planned meals ahead, showers ahead, outings for the husband and child, I had finally accepted that there was nothing I could actually do. I had to wait it out, be patient and hope that my beautiful daughter wasn't in too much pain. More importantly, I learned how to Survive Colic. 


Every mom knows that having a child in those first few weeks was completly overwhelming but I was blessed with amazing parents and friends. My mom would come over and hold the baby while I sat outside for a bit in the silence. I had friends that visited and had no judgement for me. They held my baby and chatted about the every day things that distract you and calm your mind. I had two neighbors who would walk her in her stroller around the neighborhood and that would keep her from crying.  I learned so much about my self in those four weeks and what it means to have good people in your life.  Once I was able to get in a groove here are the five things I did to survive Colic.





1) Most colicky babies have a certain time they start crying. Prepare for it. Have something for yourself to eat and nothing to "do" in that time frame. An unexpected need for anything or an unexpected visitor doesn't help when you have a crying baby.


2) Make sure if you can that you get out for fresh air. I walked and walked my crying child in her stroller. It was the ONLY thing that worked. Thankfully I lost almost all my baby weight. I also walked with my iPOD on to help me relax.


3) Ask for help from your husband, your parents, your friends. Anyone that you are comfortable with in these moments. 


4) Don't be so hard on yourself. You are not a bad mother, you are doing nothing wrong. You do not have a baby that hates you.  Do not isolate yourself from everyday life.


5) Smile at your baby, even when he/she is crying. It will make a difference to your heart.


Remember, it will not last forever. I promise. When it ends it feels life changing and with that comes a certain amount of peace and confidence. However, the memory of colic still sends a shiver up my spine and gives me sweaty armpits. My daughter just turned two and I have tried to write this post three times. The emotion overcame me and I wasn't able to complete it. My advice may sound easy but let me tell you how I figured these things out. From me hitting rock bottom and climbing back up. 


My hair was dirty, my c-section hurt , I had throw up in my hair and I was alone with my baby. I was so frustrated and desperate to stop her pain. We had just spent $112 dollars on a fancy formula that made the baby vomit like a water fountain. It smelled like metal and was sticky on us both. It had been 9 days of crying. I had cleaned her and changed her and watched her tight body and curled fists as she screamed. I placed her in her swing and swung it left to right (colic solution) and I was so depressed (only with myself, not with the baby). I was sobbing on my kitchen floor wondering why I was such a bad mom and so I called my own mom. She knew by hearing my voice. She came, I showered she packed a bag and said she was taking the baby for the night. 


"If you are tired honey, you are no good to anyone. Get some sleep, take a shower and rest."


I cried and cried and told my mom that she would be up all night and she would be exhausted. My mom just looked at me, gave me a hug and took the baby for an overnight. I showered and waited for my husband and two year old to get home. I held her and we played. I got a full nights rest in my bed and not on the couch. In the morning, I got up and looked at my baby chart and saw that a pattern existed. I got organized, did some reading and went to pick up my baby girl. I needed her and she needed me..that night when she started to cry and I began my stroller walk. I sang to her from that song "Ho, Hey" from the Lumineers. She was and still is soothed by the sound of my singing voice.

This was a really hard time but when it ended we settled into life with two kids, she stopped having colic and then at 17 weeks old she began to have seizures. It is another entirely different story that we are still writing.  She is a wonderful little girl, full of love and snuggles and I couldn't be more blessed.
