Antipasta Skewers

  Hello summer season! It is time for parties, barbecues and all things warm. I tend to cook a lot lighter during the warm weather. Even though Memorial day is just behind us, I have already had to "bring a dish" to a couple of events.  I now have made this twice and each time I received rave reviews. The nice thing about this recipe is that you can change it up to be anything you would like. 

Wooden Skewers
Cherry Tomatoes
1 can of Large un-chopped olives
1/4 pound of Salami (you can choose any meat)
Frozen Cheese Tortellini
Balsamic Glaze
Mozzarella balls (small/medium)

I set this up in an assembly line and I was able to do 1 full round and 1/2. It depends on how big you want your skewers. I did the tomatoes, the olives, the tortellini etc until my skewer was full. Then I laid them flat across a pan and did a generous drizzle of the balsamic glaze. 

Tip - fold the salami in quarters and the basil in thirds so it sticks on your skewer better.

These travel easy, feed plenty and are light for the summer weather. 
Give it a drizzle and Go.
